Abstract

Three dextranases produced by Penicillium were compared with respect to their activity and stability at different pH values, to their molecular weight, to their affinity to Sephadex G-25, and to their action on dextrans that contain varying proportions of different bonds. The enzyme produced by P funiculosum strain NRRL 1768 is considered a suitable enzyme for use in an enzymatic dental plaque elimination system.
