Abstract
Pilot plant scale studies on drum drying of beet slurry indicate that such process is feasible for the production of beet powder. Compared to the conventional dice air dehydration drum drying has much faster rates and better steam efficiency. Moisture was reduced to the desired Ievel of 3.8‐4.0% using a double drum drier (60 cm length by 35 cm diameter) operated at 123°C with 18 sec drying retention time. Colour stability of the drum dried powder during storage (25, 31, 35, 40 and 45°C) was slightly better than that of the powder obtained in the conventional tunnel dehydration.
