Abstract

The presence of solid surfactants does not affect significantly the x-ray diffraction pattern of the forms in monoacid triglycerides, but their presence affects the heat capacity of both alpha and beta forms of tristearin. The effect of Span 60 on polymorphic transformations of tristearin and trilaurin is different from that of the other emulsifiers. The exclusivity of the solid sorbitan esters as dynamic controllers has been correlated to its structural affinity with the fat.
