Abstract
This work aims to assess the influence of amaranthus (Amaranthus cruentus) and quinoa (Chenopodium quinoa) seed additive to rat fodder on blood biochemical parameters. A high-fructose animal model of oxidative stress was used in this study. The following blood parameters were assessed: total cholesterol, HDL, LDL, triglycerides, glucose, urea, uric acid, creatinine, albumin, total protein, and alkaline phosphatase activity, as well as blood levels of Na, K, Mg, Ca, and Cl. Addition of the feed additives to the high fructose diet resulted in a high beneficial change in the level of protection against the harmful effects of fructose. Most notable effects were in the levels of triglycerides and LDL, with some insignificant effects on HDL levels.
